8-10 eggs
1/3 cup green peppers, mushrooms, and onions, chopped
4 – 8 thin slices ham or bacon
2 oz. cheese, shredded
salt and pepper

Instructions:
Preheat the oven to 350°F. Whisk the eggs together with seasoning and veggies. Add the cheese and stir. Spray muffin tins. Place the batter in muffin forms 1/2 full and add bacon or ham. Bake for 15–20 minutes, depending on the size of the muffin forms.
