Ingredients:

6 hard-cooked eggs, peeled and cut lengthwise
¼ cup Light Mayonnaise or Salad Dressing
2 teaspoon mustard
½ teaspoon rice or white vinegar
1/8 teaspoon salt
¼ teaspoon ground black pepper
1 teaspoon stevia

Paprika for garnish

Instructions:

Pop out (remove) the egg yolks to a small bowl and mash with a fork. Add mayonnaise, mustard powder, vinegar, salt and pepper and mix thoroughly. Fill the empty egg white shells with the mixture and sprinkle lightly with paprika.

HINT: Let the boiled eggs cool, then crack the shell. Place them in cool water for about 10 minutes. After that, try peeling them. It’ll make this part of the process that much easier. You could even try peeling them under cold water.

Bon Appetit!

Chances are, this won’t be the last time you’ll be making these. These will fly off the plate like wildfire at your next big get-together. You could even chop any leftovers up (if you have any – making double can help in this regard!) and make a tasty egg salad out of it for lunch tomorrow.
